Eggplant Ecstasy

Eggplant...or as my wife calls it - Aubergine (Queen's English) is her favourite vegetable. It used to be one of my hated vegetables, but i've been converted into loving it. Some vegetables are great cooked a certain way and are radioactive when cooked the wrong way. My early experiences with eggplant were of the radioactive kind.
